DON'T WAIT FOR THE WORLD TO BE READY | LAST FOR 2015



The new year is not almost here, nor around the corner, it has actually arrived and knocking the door, but you need to wait little bit before you open the door for it.

I won't be talking about celebrations and these stuff, all I'll be talking about is how to be the one you want to be in 2016. I once heard that people love the concept of new years just because the new beginning motivates them to achieve and score, and it means a new life, so they love it to start all over again from the zero and make the right decisions and live right and peacefully.

The new year is not about the numbers, it's about living the way you want, so set your new year's resolution and do your best to achieve them, share them with your friends and get motivated, feel happy while achieving them, always believe that you're doing the right thing and make your January your lucky month, no ! make every single day your lucky day, make it a day of achievement, success, happiness and satisfaction. don't wait for the world to be ready, be the one who will make that huge change to the world and never belittle your spontaneous thoughts, those may be the bit that will turn your life up side down,for the better hopefully.

Carrot cake


This is one of my favoutire  recipes since I was little, and I'd always have it especially at winter time because whenever I eat it I somehow feel warm and cosy..


YOU WILL NEED:
- 3 Grated carrots
- 4 large eggs
- 1 cup vegetable oil
- 1 cup sugar
- 1/2 cup brown sugar
- 2 1/4 cups flour 
- 1/2 tsp salt
- 1 tbsp baking powder
- 1/2 tsp bicarbonate of soda (aka baking soda)
- 1 tsp cinnamon
- 1/2 cup walnut 


1.Preheat your oven to 180C , and grease your tin. 

2. In a bowl, add  the eggs, oil, sugar and brown sugar and WHIP them very well.

3. In a second bowl, sift together all the dry ingredients.

4. Add the flour mixture to the egg mixture and MIX them gently.

5. Add the carrots and the walnut and mix them one more time.

6. Pour the mixture in your greased tin, then pop it in the oven.

7. Cook it for 30 to 40 minutes or until you insert a tooth stick and it comes out clean.

8. leave it for a while to cool off and enjoy it.

LAYLA FROM LEBANON | EPISODE 5


      Don't you miss my restaurants visits ? me too, so this post is a little review about the place I had lunch at today.

       It's called Layla from Lebanon ( Layla is a girl name in Arabic), located in the cube mall in Al-Salymiya, and it is a Lebanese restaurant.

The place is so so beautiful and cute and I loved it so much.

THE CUTE MENU

     For the food, I've been having appetisers as my main course instead of a large dish that I won't be able to finish. my choice was "manti" which is an Armenian specialty consists of kafta dumplings dipped in tomato sauce and yoghurt. 




        The other food we had was basic Lebanese food, but the most important item for we was a type of appetisers  which called "muhammara" which is basically crushed walnuts with other ingredients, and it tastes incredible.



           Alongside other delicious dishes...

LAZY CAKE

Hello.. I really missed being here but now I'm back


This recipe is not a cake at all, yet it's as delicious as a cake, also the reason why it's called lazy because it needs to be set for a long time in the freezer.


Ingredients:
- 2 packs of digestive biscuits 
- 2 sticks of unsalted butter
- 50 grams of chocolate 
- 1 tbsp cocoa powder

You'll also need:
Silicon mold


Method:

1. crush the biscuits into fine pieces, you also need some bigger chunks.


2. In a large pot on the stove, add only 1 1/2 sticks of butter ( you will need the other half later) and let the butter melt.

3. when the butter is almost melted, add the chocolate and stir it very well, make sure it does'nt burn.


4. At this stage add the cocoa powder, this gives the mixture  richy taste and nicer colour.


5. Once everything is mixed well, and the biscuits and stir them very well.


6. Remember the butter we left earlier, this is the time we will use it, add it and stir one more time.

7. Grab the Silicon mold, and using an ice cream scoop start scooping the mixture and tap it with your hand to sit it in place.


8. wrap the mold with plastic wrap and pop in the freezer over night.



- once it's ready get it out of the freezer and serve it.

MINI SIZE S'MORES

Who does't love s'mores ? especially when it's still hot and gooey *yumm*
Today I'm making mini&bite size s'mores, enjoy !

Ingredients:
-Mini marshmallows 
-Chocolate
-Biscuits (or Graham Crackers if you have them where you live)
((No specific quantities))

You will also need: mini ramekins or oven-safe dishes 
 ** preheat your oven to 180C**



1. Stats with crushing up the biscuits, whether you'll  be using a food processor, or by hands, just don't crush them very finely, I think some bigger chunks make it better!


2. Melt the chocolate using either the double boiler technique or the microwave 30 secs stir, 20 secs stir, 10 secs stir, 10 secs stir, until it's completely melted. just don't burn it.



3. Once the chocolate is melted, put it in a piping bag.


4. Melt a bit of butter,add it to the biscuits and stir it very well.



5. TIME TO ASSEMBLE!

5.1 Add the biscuit mixture first and press it very well.

  
5.2 Add the chocolate.


5.3 The marshmallows .

6. Put it in the oven for ten minutes, then up in the grill for a couple of minutes. keep a good eye on them so the don't burn.

HOW TO DEAL WITH FLU


Lately the weather has been quite bad that everyone is getting ill, and it felt like I'm the first victim so I decided to share with you what I did to survive..


1. HAVE REST: Stop making everything and and just have rest or stay in bed the longest time possible,.

2. STAY COZY:
It is important to stay cozy and warm when your'e ill using a warm soft blanket, fuzzy socks and a  sweater, this helps your immune system to work much better.

 My stay-cozy essentials :) 


3.HOT DRINKS AND MEDICINE:
Don't forget to have your medicines and drink a hot drink, this obviously makes you feel better.

  
And a cute mug never hurts ;)

4. THE LIFE SAVIOR:
A great great woman gave me this recipe that made me feel so much better and I have to share it with you 
Ingredients:
1 cup water
1 lemon
1 tbsp honey 
yes these are the ingredients !
 -start with boiling the water on a stove. 


-While the water is boiling rinse and chop up the lemon into pieces.


- Once it's completely boiling turn the heat down and add the lemon parts, leave them to boil together on low heat for 15 minutes.


-When it's ready pour it in a cup, wait a bit until it cools down to 45C. then add the honey and stir,( if you add the honey while it's still hot, the honey loses its properties!!) 


And if you want to make a large quantity just multiply the ingredients.

Chicken with sumac and tomato sauce

 Have you ever wanted a quick lunch idea, or even for dinner? I GOT YOU !

Ingredients:
the chicken seasoning 
  • one chicken breast 
  • one tsp sumac 
  • one tsp dried thyme
  • one tbsp olive oil
For the tomato sauce:
  • one canned tomato 
  •  a pinch salt and pepper 
  • tsp oregano 

1. Season the chicken with sumac and thyme and rub it all together with some olive oil.



2. This chicken breast will be grilled, so heat up your grill and drizzle some olive oil.

3. Add the chicken and let it cook for five minutes on one side.



4. In the meanwhile, start making the sauce.

4A. Add the canned tomato to a sauce pan.


4B. Add the spices, stir,and let it simmer.



  
5. After five minutes, flip over the chicken and let it cook for more five minutes on the other side.


 After five minutes everything should be done, the chicken should be fully cooked and tender inside, and the sauce should be think, smooth and glossy. 

6. TIME TO SERVE! 
I went with cooked rice, but of course you can serve it however you want.

3 INGREDIENTS PEANUT BUTTER COOKIES

As you read in the tittle, this recipe needs only 3 ingredients which are:

  • 1 cup of peanut butter
  • 1 cup of sugar
  • 1 egg 




1. Preheat your oven to 180C.

2. In a bowl mix all the ingredients for 3 minutes until the mixture is very smooth.



3. shape them to get the perfect ball shape and put them in the baking sheet.


4. Using a fork, press them to look like this

 5. Put them in the oven for 8-10 minutes.




And that's it.
