APPLE LOAF

  

      Thick batter, rich flavour, moist cake. This recipe is good for tea time, morning parties, and anything and everything. something phenomenal.


INGREDIENTS:

- 2 ½  apples
- 7 tbsp butter
½  cup sugar and 2 tsp - separated- 
- 2 eggs
- 1 tsp vanilla extract
- 2 cups flour
½  tsp salt 
- 2 ½ tsp baking powder 
- 1 tsp cinnamon 
⅔ cup milk 
½ cup shredded coconut 

½ cup condensed milk for later 

PREHEAT YOUR OVEN TO 180C

- grease your loaf tin and line it with parchment paper in this specific way to make it easier to get the loaf out of the tin after it's done.



1. Peel, core, and slice the apples into wedges.

2. in a sauce pan, add the apples, and one teaspoon of the sugar, turn on the stove and keep mixing until the apples soften, then add the other teaspoon of sugar and stir again until it's too soft, then mash it with a potato masher leaving some chunks. 



3. In a large bowl, beat together butter and sugar until fluffy and well-combined, then add the eggs, apple mash, and the vanilla and beat to incorporate.


4. Stir together all the dry ingredients, then add them to the mixture, add coconut and milk and stir them one more time.


5. transfer batter to the loaf tin, and bake for 55 minutes.



6. let the cake cool for 20 minute , then pour over the condensed milk.

ITALIAN PANCAKE




      This is the easiest pancake recipe ever !


INGREDIENTS:
- 1 Cup flour
- 1 Cup milk
- 1 Egg
- 3 tbsp sugar
- 1 tsp baking powder
- vanilla 


1. In a large bowl, mix together the flour, milk, and egg until there is no lumps, then add the remaining ingredients and mix properly 

2. In a hot pan, add some vegetable oil, then starts pouring your batter in a ¼ cup measuring cup, or any scoop actually that is not huge.

3. Cook your pancakes for 54 seconds to a minute on each side depending on the size , or until it gets golden and brown.

- This batter makes up to 24 pancakes depending on the size-

THE BEST CARAMEL POPCORN RECIPE EVER


 

    Who doesn't love popcorn?, it's so great when watching movies, it's considered healthy; as it fills the tummy fast and doesn't contain a lot of calories - but not today's recipe- , and it's delicious !.
   If you're like me, and you can't decide between salt or caramel because you love both, then you should give this recipe a try.

INGREDIENTS 




preheat your oven to 180C/350F

1. Cook your kernels the way you do, then when they're done, leave them to cool a bit on a baking sheet lined with parchment.


2. In a sauce pan add in : the butter, the sugar, and the syrups mixture, stir them gently then turn on the stove and let the butter melt, leave it until simmer, then remove it off the stove.


3. Add the vanilla for some sort of flavour, then add the baking soda, you will notice that the mixture starts to change colour and bubble a bit. 


4. Pour the sugary syrup over the popcorn, stir them to distribute it evenly, then in the oven it goes for twenty minutes, and under the grill for ten minutes to get toasty, you want a nice caramelly colour in the end.

 - rotate the sheet in the middle of the time, to be cooked evenly- 
- time may vary so be careful not to get so dark it might burn-

OM ALI



  Om Ali is an Arabian dessert - means Ali's mother in Arabic-, I really don't know reason of calling it like this, but anyways it tastes amazing, in fact it's my alltime  favourite dessert, and it doesn't really need that much ingredients.


Om Ali is basically a pastry soaked in milk mixture and nuts and cooked in the oven, -usually served warm- the pastry is usually puff pastry or toast bread.


INGREDIENTS:
- 4 puff pastry squares 
- 1 cup milk 
½ cup cream 
¼ cup nuts, I only used walnuts, you can add dried fruits, almonds, cashews,raisins, whatever you like
- 1 tbsp cinnamon sugar - basically cinnamon mixed with sugar-


*This quantity is enough for 2-4 people*

PREHEAT YOUR OVEN TO 180C


1. First of all bake the puff pastry for 15 minutes until it's puffed and golden,then leave it to cool completely.


2. In a bowl, mix together all the other ingredients.


3. In an oven safe dish, break the pastry into little chunks, pour the milk mixture over and leave them ten minutes to soak up, top it ou with the walnuts. 


4. Finally bake them for 20 minutes, leave it a bit to cool, and then you have the best dessert ever.

A WHOLE MONTH OF HAPPINESS

  رمضان كريم..
عَسى أنْ يكونَ شهراً مليئاُ بالخير و الأجر و البركة, و عسى أن يعيننا الله على الصيام و القيام و يعيننا على الصبر و احتساب الأجر.

  Well basically, Ramadan is a month of happiness and goodness for us Muslims, as it's a month of fasting, spiritual reflection, and increased devotion.

  We know that this is the first day of fasting when a crescent of new month appears, and the fasting duration is from the dawn (before the sun rise) until the sun set, and during that, we do all kinds of Worship,( praying, reading Quran,..) we also refrain from doing, saying, or committing bad things.

The aim of fasting is to tame ourselves, to learn patience, and to feel the poor people.

 Plus, the reward of the good things we do is doubled, tripled, no, even more.

So my lovely readers, I might not be here for the rest of the month, and I might be, hope you have the best Ramadan ever, do good stuff and later until then. 💙

WATERMELON SALAD



Yes I'm serious, watermelon in a salad, it's not a fruit saladز this is one of the things that you can't judge until you try.


INGREDIENTS:
- Watermelon portion
- White cheese 
- Red onion
- Olives 
DRESSING 
- Lemon juice 
- Olive oil 
- Salt
- Sumac 




1. Chop up the watermelon into cubes

 
2. Add the cheese..

3. Add the onion - If you want to reduce the onion's strong flavour you can soak in lemon juice for a while-

4. Add the olives..

5. Mix the dressing ingredients and drizzle it over the lovely salad.

WHAT TO EAT IN A DAY SUPER HEALTHY EDITION PT 3


THE CONCLUSION:

I'm not a nutritionist yet, but I guess the easiest/the best way to start a new healthy lifestyle is following these tips SERIOUSLY.


1. Stop eating after 6pm : especially if you sleep early, it's important to have an empty tummy -at least two hours before you sleep, as the metabolism and the digestion stop or slow when you sleep, and the food you eat right before you sleep won't be digested well !

2. Move your body: the good food is not really enough to be in your dream body shape, you need at least to do any kind of sports twice a week; to burn calories, improve your health, and to be flexible.

3. Eat wisely: don't prevent yourself from eating the food you love. instead, eat small portions, especially sweets and foods high in calories, and full of added sugar.

4. Eat only when you feel hungry: If you can stay still for several hours without eating, it's fine, you don't need you fill your tummy every ten minutes.

5. Have healthier alternatives :grilled instead of fried, homemade instead of fast food, whole grains instead of white, healthy rather than tasty, and wholesome food rather than sweet things, and the list goes on and on and on.

6. Complex carbs : they are found in
  • Low fat yogurt
  • Skimmed milk
  • Lentils
  • Kidney beans
  • Chick peas
  •  peas
  • Soy beans
  • Soy milk
  • Buckwheat
  • Brown rice
  • Corn
  • Wheat
  • Barley
  • Sorghum
  • Quinoa
  • Sweet potato
carbs anyway provide energy, but the special thing about the complex ones is they take longer time to be digested which means you feel full for longer time and you won't be craving food a lot,

7. Stop fizzy drinks: they are nothing but sugar, sugar, and more added sugar. they also make you feel lazy and idle. still want to drink them ?

8. Know what you put in your tummy: your body doesn't need to be filled with junk at all, so please thinks twice before you eat a nutty chocolate bar filled with caramel !

9. Water water water : nothing really better than water to be in the best health, water prevents dehydration, activates cells, and flushes toxins. - good job H2O

10. Proteins : Found in:

  • meat
  • eggs
  • beans 

 to build up muscles, to feel full as long as possible, and to prevent you from Muscle strain while doing sports.

11.  smoothies and juices : full of minerals, vitamins, and antioxidants to make you all good.

WHAT TO EAT IN A DAY SUPER HEALTHY EDITION PT 2



BREAKFAST:

If there was a competition for who loves breakfast the most, I would definitely win, breakfast is my favorite meal of the day, that I could skip lunch and dinner and it's fine with me, whereas breakfast is priority.

That's why I began to search, create, and recreate recipes, - healthy ones of course-

I have two cases of eating breakfast where I eat different things :

1. weekdays (when I have school) :

I do my best to eat before I go to school  -which requires waking up earlier-, normally I have granola with milk -I made a recipe months ago which you can check out HERE- but If there's no time or If I'm running out of stock, I will have a wholegrain bread sandwich which white cheese.


2. Weekends, holidays:

   When the day of comfort comes I really like to have a fancy breakfast, so I either create or try a new recipe, or I stick to my ultimate favorite breakfast, which is omelet, - or eggs in general. Again, I would win the first place if there was a competition for who loves eggs the most!

   My breakfast consists of : 2-egg omelet containing tomatoes, spinach, and cheese, a small bowl of granola, and any beverage depending on what I feel like drinking.



LUNCH:

   Normally, my lunch is based on what  mom cooks, yet in the days where I get to cook what I want, I love to make salad, full of yummy ingredients and nutritional values, here's a recipe.

Ingredients:
Tomatoes
spinach
avocado
white cheese
walnuts 
Dressing:
lemon juice
wholegrain mustered




DINNER:

   I normally don't eat dinner, I love to sleep with an empty tummy, but if I'm really craving food , I will eat yogurt, as I said in my previous post.

WHAT TO EAT IN A DAY SUPER HEALTHY EDITION PT 1



   When It comes to eating healthily, I'm a geek, although I don't have that perfect body, nor that overwhelming diet. But the thing is that you should be aware of what you put in your tummy, fill it with goodness and you'll shine. Load it with crap, and chances are, you'll feel crap ( after the initial five minutes of pleasure has worn off) !


      So lately I've changed my eating style and replaced a lot of foods with much better alternatives and added some pretty good stuff to my daily routine, so I'll be sharing my -eating healthily- experience in three posts, this one will be the snacks I eat, or lets say the not main meals part, the second will be my breakfast, lunch, and dinner, and the third one will be my detoxing experience and the recipe I drink and how to do it, etc..

So now let me show what I eat in a day...



1. When I first wake up:
We all now that it is important to drink a cold cup of water as soon as we wake up; to improve the metabolism and stuff, but a addition here is honey, yes honey.
Honey water is the best thing ever, and you will now why is a minute, basically you only need a cup of warm water and add about two tea spoons of honey, stir them well and that's it.



Benefits:
-  helps losing weight
-  gives a natural shine to the skin
-  Improves the immunity 
-  stimulates the digestive process 
-  gives the body a great power for the day 
-  honey is good for those who have anemia 
-  It helps to stimulate the liver secretions
-  honey is antibacterial and fights acne 
-  It helps to hydrate your body throughout the day


2. Two hours after breakfast:
After breakfast in couple hours you need to fill your little tummy again, but not that much because you need some space for lunch, so the best snack to have at that time is nuts, and here the things I chose:
walnuts: good for the brain and increases intelligence 
almonds: lowers cholesterol 
raisins: antibacterial and taste good 
* the nuts are for sure raw, and you only need a handful of each one*



3. Three hours after lunch:
After refilling your little tummy with a heavy meal, three hours later you might feel hungry a bit again, so the best thing here to have is a collection of -almost- zero-calorie veggies which are, cucumber, carrot, lettuce, and bell pepper, these veggies are full of fiber, iron, and minerals, better then the best.!


4. Right before sleep:
This step is only for those who sleep early - between 8pm and 11pm- so if you want to get the best result, you gotta sleep early.
The thing is yogurt, yes yogurt with a squeeze of half a lemon. this mixture makes miracles, as 1. yogurt is a protein which is so good to have at night 2. lemon has vitamin C which helps the body soak the protein. this mixture activates a hormone that works best at night while sleeping and burns fat very well, so keep that in mind and don't forget to sleep early.

CHICKEN VEGETABLE RAMEN


       In case you don't know what ramen is, it's basically a Japanese kind of noodles which has so many nutritional values, and it's delicious you can't resist it *mmm*


This dish is a left-over dish, which means you can use any vegetable you have, and any left over protein source (aka chicken, beef, turkey...) 


INGREDIENTS:

- One pack of instant ramen
- One carrot 
- One small onion 
- A handful of broccoli 
- Cooked chicken breast 
- Soy sauce 
worchestire sauce


METHOD:

1. Dice up the onion, peel, and slice the carrot into long thin strips.



2. In a hot wok drizzled with a bit of vegetable oil, stir together the carrot and the onion.



3. while the carrot is being cooked, steam the broccoli in salted water, and cook the ramen in salted water too. - the ramen takes 11 minutes to be done- 


4. Add the chicken to the carrot and stir again.



5. remove the carrot mixture from the wok, and drizzle it with soy and worchestire sauce.
    at that time the broccoli and  should be done, so remove it too.

6. To serve, take a handful of the ramen straight from the pan you cooked it in, letting some of the cooking water to seep through and put it in a small bowl, add the carrot and chicken, and top it with the broccoli, drizzle soy sauce one more time, and you're done.

COMFORT FOOD



 Comfort food:
   is basically food that provides consolation or a feeling of well-being, typically having high sugar or carbohydrate content and associated with childhood and home cooking. Is food that not only comforting to the taste buds, but all the senses.
Food that provides a sense of comfort and puts your mind at ease. Food that makes you forget your troubles, and set you in peace...

SO, I decided to share two of the foods I consider comfort food..


HOT CHOCOLATE

Expected ? well, chocolate is well known at making people happy and relaxed. 

This recipe is good for those who crave sweets as comfort food.

The ingredients are basic, but this version has a tiny little change in it.
-1 cup of milk
-50 grams of dark chocolate 
- any flavoring substance ( vanilla extract, cinnamon,....)

- Using real chocolate instead of hot chocolate mix will make it creamy, rich, and of course comforting-

METHOD:

1. Chop up your chocolate very finely. Using a double boiler method met the chocolate. To make sure the chocolate doesn't burn, stir it every 30 seconds.


2. heat up the of milk and leave it aside until the chocolate is ready.

3. When the chocolate is completely melted, add it to the milk and stir them very very well.






MASH POTATO 

If you love savory stuff, this is perfect for you
For me, mash potato is the ultimate comfort food, It's so creamy, so rich, and so warm (mmm, best thing ever)

INGREDIENTS:


METHOD:

1. Boil the potatoes for 40 minutes, peel them, and let cool for a bit.

2. In a food processor, add all the ingredients at once, blend on medium speed, you want to reach a  rich consistency, season it with salt to balance the flavors.

-If you don't have a food processor, you can use a mashing tool, yet the consistency won't be the same-


Then basically serve, it can be topped with some olive oil, or plain as your choice.

A MEAL FOR ONE



        I'm sure that every single one of you has at least been once hungry and had no idea what to eat,, it happens a lot to me, and I end up drinking tea instead.

Well, to prevent that I came up with a three-course meal thing that will make you satisfied every single time.



The appetizer:
 It's a salad that you might have never tasted before, it might seem weird though, yet it's so delicious.

Ingredients:
- Thyme 
- Green onion 
- Tomato
- Olive oil 
- Pinch of salt

1. Chop up the green onion and the tomato, then add them in a bowl with the thyme, drizzle some olive oil, and season it with some salt. and basically that's it.

This mixture can also be a great sandwich filling ;)





 

 
     The main course:
 Broccoli, chicken pasta with white sauce.

Ingredients:
- pasta, the shape you want
- Broccoli
- Chicken breast
The sauce:
- 1 cup of milk
- 1/2 cup of cream
-1/2 cup yogurt 
- Thyme
- dill


1. cook the pasta until it's ready and leave it aside.

2. steam the broccoli for ten minutes.

3. slice the chicken breast, and in a hot pan, cook it with diced onion and sumac for ten minutes.

4. In a mixing bowl, add all the sauce ingredients and mix them very well.

TIME TO ASSEMBLE 

5. In a Pyrex, add a layer of the sauce, followed by a layer of the pasta, followed by the steamed broccoli and the cooked chicken. repeat until the Pyrex is filled.




6. Add the Pyrex in an oven  preheated to 180C, leave it for about 20 minutes.





The drink/dessert:
Chocolate banana ice cream smoothie.

Ingredients:
-2 frozen banana
-1 cup milk
- 50 grams dark chocolate

1. In a food processor, blend together the banana and the milk until it has a smooth consistency.

2. chop up the chocolate into tiny pieces, then blend it one more time with the banana mixture.

3. put the mixture in the freezer for one hour, and enjoy.
